Why olive oil is the hardest case in the pantry
There is a neat piece of evidence for this that requires no interpretation. When European regulators test whether a plastic is safe for food contact, they do not test with the actual food. They use simulants chosen to represent categories of food, and the simulant category representing fatty foods is vegetable oil. Olive oil has long served in this role. The regulatory framework treats fat as the demanding case, so the material chosen to represent the demanding case is the very thing sitting in your oil bottle.
The reason is solubility. Plasticisers, stabilisers and processing residues are frequently lipophilic, dissolving well in fat and poorly in water. Put fat against a polymer and you have an efficient extraction system, and unlike a bottle of water, a bottle of oil sits there for weeks or months while it works.
The same logic runs through cheese and oil-packed canned tuna. Fat is the theme.
The second problem: light
This one is not about plastics at all, but it belongs here because it changes what you should buy and most people get it wrong.
Olive oil is photosensitive. Light drives oxidation, which degrades flavour, shortens shelf life, and reduces the polyphenol content that supplies most of the health argument for extra virgin olive oil in the first place. A clear bottle on a sunlit counter is actively destroying the product. This is why serious producers have always used dark green glass or opaque tins, and why a beautiful clear bottle is a marketing decision rather than a quality one.
So the ideal container blocks light and avoids polymer contact, which narrows it to two options.

The pattern worth noticing is that price does not track the ranking. A Costco dark-glass bottle outperforms a design-led clear plastic bottle at three times the price. The variable is the container, and the container is the cheapest part of the product.
How to buy and store it
- Dark glass or tin, every time. If a shop only has clear bottles, buy the smallest one and keep it in a cupboard.
- Buy tins for bulk, decant into a small dark glass bottle for daily use. The bulk stays sealed and dark; only a week's worth is exposed to air and handling.
- Never store oil next to the hob. It is the most convenient spot and the worst one, combining heat and light on a product sensitive to both.
