The short answer

A pan surface runs far hotter than any food-grade plastic is rated for, and a nylon or plastic spatula pressed against it is softening at the contact point. Black plastic utensils carry a second issue: recycled electronic plastic has been found in some, bringing flame retardants with it.

Why does this happen?

Pan surfaces reach 150–250°C, above the rating of most kitchen plastics. The utensil tip softens and abrades against the pan. Repeated use degrades and deforms the working edge. Some black plastic utensils contain recycled e-waste polymer.

What should I do instead?

Switch to stainless steel, wood or bamboo utensils. Retire any utensil with a melted, rough or discoloured edge. Be especially wary of black plastic utensils. Silicone is acceptable if it is platinum-cured and within its rating.
