What are PFAS, and how do they differ from microplastics?

PFAS stands for per- and polyfluoroalkyl substances, a family of thousands of human-made chemicals built around one of the strongest bonds in chemistry, carbon-fluorine. That bond is why they repel both water and grease, which made them incredibly useful for nonstick pans, waterproof jackets, stain-resistant carpet, and grease-proof food wrappers. It is also why nothing in nature breaks them down, hence the nickname forever chemicals.

Here is how the three plastic-chemical concerns line up, because people conflate them constantly:

  • Microplastics are solid plastic particlesthat shed off plastic products. You could count them.

  • PFAS are a separate chemical family used for water- and grease-proofing. They don't come from plastic softening; they come from coatings and treatments, and they persist far longer in the body.

Where PFAS hide in daily life

For food and water specifically, three sources dominate:

  • Grease-proof food packaging. Fast-food wrappers, molded-fiber bowls, microwave popcorn bags, and some takeout containers are treated with PFAS to stop grease soaking through, and it migrates into the food. Recent testing found PFAS in products from major brands.
  • Drinking water. PFAS from industrial sites and firefighting foam have contaminated water supplies across the country. This is the source you can most directly control, and the EPA's 2024 limits are aimed squarely at it.

The health case, and why regulators moved

PFAS have the strongest health evidence of the three concerns. Research associates them with raised cholesterol, reduced vaccine response and other immune effects, thyroid disruption, liver effects, pregnancy complications, and certain cancers (notably kidney and testicular). Two of the oldest compounds, PFOA and PFOS, are the most studied and most implicated. The evidence was strong enough that in 2024 the US EPA set the first legally enforceable drinking-water limits for six PFAS compounds, the first new tap-water standard for any contaminant in decades. That is a meaningfully bigger regulatory step than microplastics or phthalates have reached.

How to actually reduce your PFAS exposure

  • Filter your water, correctly. Not every filter removes PFAS. Reverse osmosis and certain certified activated-carbon and ion-exchange filters do; a basic pitcher may not.   • Retire scratched nonstick. Replace worn PTFE pans with cast iron, stainless, or carbon steel. Never preheat empty nonstick on high heat.
