The short answer

Depends entirely on the product, and the marketing will not tell you. Bamboo boards are strips glued with resin. "Bamboo fibre" tableware is usually bamboo powder bound in melamine resin — which is a plastic dish with bamboo in it.

What Bamboo composite actually is

Two very different products sold under one reassuring word. A bamboo cutting board is real bamboo laminated with adhesive, closer to hardwood than to plastic. Bamboo-fibre cups, plates and children's tableware are typically a melamine-formaldehyde composite with bamboo powder as filler — several European regulators have restricted these on formaldehyde migration grounds.

Why Bamboo composite is not a microplastic source

For laminated boards the question is the adhesive at the glue lines, which has not been studied. For bamboo-fibre tableware the binder is the product — it is a melamine composite, it must not be microwaved, and formaldehyde migration into hot and acidic contents is the established regulatory concern rather than particle shedding. Neither has been measured for particles.
