Which cutting board should I actually be using?
The verdict
Wood, and this is one of the few kitchen questions with a direct measurement behind it. Chopping on a plastic board was estimated to generate tens of millions of microplastic particles per person per year, straight into the food. A wooden board generates wood.
These carry different evidence grades. Plastic cutting board is grade A and Wooden cutting board is grade B. Where this comparison stops being reliable
The annual figures come from a controlled chopping protocol extrapolated to a year, and real kitchens vary enormously. Bamboo and composite boards were not tested and many are resin-laminated, so they are not automatically the wood answer.

Does Wooden cutting board have microplastics?
No plastic to release. Wood was the comparison arm in the study that measured plastic boards, and it is the reason that study exists — a wooden board generates wood particles, which are not microplastics.
